Herve Dubois “Blanc de Blanc Reserve Grand Cru”

“Herve Dubois has been bottling his own production since 1979. He studied enology in Beaune. The estate is 8.85.ha (21.85 acres) mainly in Avize. This marvelous vineyard of exceptional quality is stretching over the famous and sunny Cote des Blancs. This southeast vineyard grows outstanding Chardonnay. The 6 hectares are planted in Chardonnay.1 ha was planted before 1955 and the others in the late 1960’s and early 1970’s. As do many small Champagnes producers, Herve Dubois practices ‘culture raisonnee’ in the vineyards, and uses very little chemical products. He is a farmer first and foremost and believes great vineyard management is the most important thing to making great wine. Low yield, nice exposure of the vines and chalky soil enable Hervé to make an outstanding wine combining concentration and finesse.Maloloactic fermentation is never done nor does he blend reserve wine in any of his cuvees. He likes to keep the quality and the character of each year. Hervé does not use any cooling process in order to keep all the aromas of his wine. All riddling and disgorging are done by hand.”
